Kiwi cocktail à la Gabi

Ingredients for 4 servings:

  • 4 kiwi(s), ripe, peeled
  • 1 ripe kiwi, peeled, core removed, cut into 4 thick slices
  • 1 bunch mint, leaves picked
  • 4 tbsp lime juice, freshly squeezed
  • 600 ml Bitter Lemon, ice cold

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely blend the kiwis, mint leaves and lime juice using a hand blender, pour into tall, narrow glasses, top up with bitter lemon and serve with a slice of kiwi placed on the rim of each glass.
