Semi-frozen nut cream

Ingredients for 4 servings:

  • 75 g desiccated coconut
  • 2 eggs
  • 50 g powdered sugar
  • 2 tbsp eggnog
  • 25 g walnuts, chopped
  • ¼ liter cream
  • Walnuts, halved, for decoration

to prepare well

Lightly toast the coconut flakes in a fat-free pan. Separate the eggs. Beat the egg whites with the powdered sugar until frothy, roughly tripled in size. Stir in the egg yolks, egg liqueur, coconut flakes, and chopped walnuts. Finally, fold in the very stiffly whipped cream. Rinse a metal loaf pan with cold water, pour the cream into the moist pan. Freeze for at least 6 hours. Before serving, briefly immerse the pan in hot water, turn it out, and garnish with walnut halves. Cut into slices and drizzle with a little egg liqueur, if desired.
