Homemade herb mayonnaise

Ingredients for 1 servings:

  • 1 egg(s)
  • 150 ml rapeseed oil
  • 100 g natural yogurt, 3.5% or 3.8%
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 1 tsp honey
  • salt and pepper
  • 60 g herbs of your choice, e.g. parsley, chives, mint, chervil, basil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

In a tall, narrow bowl, whisk the egg and oil together with a hand blender to make a mayonnaise. Wash, dry, and roughly chop your chosen herbs. The chopped amount should be approximately 60-70 g. In another bowl, blend the chopped herbs with the yogurt, honey, and mustard until very finely blended. Then, finely blend the mayonnaise with the herb yogurt and season with salt, pepper, and lemon juice. Refrigerate until ready to serve. This herb mayonnaise is versatile, for example, with cold roasts, baked fish, or as a marinade for pasta and potato salads.
