Minced meat pan with fennel and zucchini

Ingredients for 4 servings:

  • 500 g minced beef
  • 1 fennel
  • 1 m.-large zucchini
  • 3 garlic cloves
  • 200 ml vegetable stock
  • 50 g feta cheese or grated Parmesan
  • 3 tbsp olive oil
  • salt and pepper
  • possibly milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the minced meat in a pan, season with salt and pepper, and fry. While the meat is cooking, trim the fennel and zucchini and cut into bite-sized pieces. Finely chop the garlic cloves. Once the minced meat is nicely browned, remove it from the pan and set aside. Add the chopped fennel to the pan with a little olive oil and fry over medium heat for about 5 minutes. Then add the zucchini and fry. After another 5 minutes, add the garlic. Let it cook briefly, then deglaze the vegetables with the vegetable stock. Add the minced meat and diced feta (or grated Parmesan) and season with salt and pepper. If you like a little more sauce, you can add a little more stock or milk at this point. Serve with rice and tomato salad.
