Turkey schnitzel "Milanese"

Ingredients for 4 servings:

  • 1 onion(s)
  • 3 tbsp olive oil
  • 50 ml white wine
  • 2 tbsp, heaped tomato paste
  • 500 ml tomatoes, pureed, or canned tomatoes
  • 1 tsp oregano, dried
  • 50 ml cream or Cremefine
  • salt and pepper
  • Sugar
  • 4 turkey schnitzels
  • 50 g Parmesan, or Grana Padano
  • 100 g breadcrumbs
  • 3 eggs
  • 350g spaghetti
  • Oil for frying

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Dice the onion and sauté in olive oil until translucent. Sprinkle with a little sugar and let it caramelize for 1 minute. Add the paprika and fry briefly, then add the tomato paste and fry briefly. Deglaze with 50 ml of white wine and simmer until the strong alcohol smell has disappeared (approx. 1 minute). Add the passata (canned tomatoes must be chopped beforehand) and season with oregano. Season with salt, pepper, and sugar and simmer gently for at least 20 minutes. Bring the pasta water to a boil and cook the pasta until al dente. Meanwhile, lightly season the turkey schnitzels with salt and pepper. Coat them in flour, egg, and then the breadcrumbs and Parmesan mixture, and fry in plenty of oil. Refine the tomato sauce with the cream and season again with salt and sugar. The schnitzels should be ready along with the pasta. Arrange the schnitzel on plates and add the pasta with the tomato sauce.
