Ingredients for 4 servings:
- 2 kg asparagus
- 2 eggs
- 4 sprigs of dill
- 100 g bacon, streaky
- 1 tbsp oil
- 150 g shrimp(s) or crab
- salt and pepper
- 100 g butter
- 2 tbsp lemon juice
- 2 tbsp oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
with shrimp, bacon, egg and dill and new potatoes
Peel the asparagus and cook in salted water with a pinch of sugar for 15 minutes until tender. Hard-boil the eggs, peel them, and roughly chop them. Pull the dill from the stalks and finely chop them. Dice the bacon and fry in 1 tablespoon of oil until crispy, then set aside. Heat the remaining oil in another pan and fry the shrimp for 1-2 minutes. Season with salt and pepper and remove from the pan. Heat the butter in this pan, add the bacon cubes, shrimp, and egg cubes. Season with dill, lemon juice, and more salt and pepper if desired, and pour the butter mixture over the asparagus. New potatoes go very well with this.
