Ingredients for 4 servings:
- 700 g potato(s), waxy
- Salt
- 250 g kohlrabi
- 100 g gherkins
- 200 g meat sausage
- 50 g mayonnaise
- 100 g yogurt
- 100 g sour cream
- 2 tsp mustard
- 1 tsp honey
- Pepper, white, from the mill
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 55 minutes
Wash the potatoes and cook in salted water for about 25 minutes. Peel while hot, let cool, and slice. Peel the kohlrabi, dice into 1 cm cubes, and cook in salted water for 5 minutes until al dente. Refresh in iced water and drain. Cut gherkins into thin slices. Peel the bolognese, halve lengthwise, and slice. Mix the remaining ingredients with about 2 tablespoons of gherkin broth and stir in the prepared ingredients. Cover the salad and refrigerate for 3 hours. Remove 1 hour before serving and season again.
