Olive rolls

Ingredients for 1 servings:

  • 500 g spelt flour (wholemeal spelt)
  • 21 g yeast, fresh
  • 1 tsp coriander, ground
  • 1 tsp, leveled salt
  • 300 ml water, lukewarm
  • 1 tsp olive oil
  • 100 g black olives, pitted

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

for approx. 12 rolls

Drain the olives. Dissolve the yeast in lukewarm water and knead it with the flour, coriander, salt, and olive oil in a food processor. Meanwhile, halve 6 olives. Chop the remaining olives into small pieces and add them to the dough. Knead until the dough pulls away from the bowl. Let the dough rise for 30 minutes. Cut off 12 equal pieces and form round rolls. Place them on the baking sheet and gently press half an olive onto each one. Bake in a preheated oven at 200°C for 15 minutes.
