Double Chocolate Cookies

Ingredients for 1 servings:

  • 250 g dark chocolate
  • 125 g margarine (Lätta)
  • 1 pinch of salt
  • 175 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 200 g flour
  • 1 tsp baking powder
  • 1 tbsp cocoa powder
  • 100 g chocolate (milk chocolate)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Super delicious chocolate cookies

Chop 150g of dark chocolate and melt over a pan of simmering water. Briefly melt the Lätta in the microwave. Beat with salt, sugar, and vanilla sugar using the whisk attachment of a mixer until creamy. Stir in the egg. Stir in the melted chocolate. Mix the flour with the cocoa powder and baking powder and stir into the chocolate cream. Don’t be surprised if the batter is very firm; it’s meant to be. Roughly chop the remaining 100g of dark chocolate and the milk chocolate and fold into the batter. Using 2 teaspoons, place small heaps onto baking sheets lined with baking paper. Leave some space between them, as the cookies will spread. Bake in a preheated oven at 175°C (top/bottom heat) for about 10-12 minutes. I remove them from the oven after 11 minutes. This way, they are light and fluffy, yet still slightly crispy. Let them cool completely. The chocolate pieces will then firm up again. I know it sounds strange to use Lätta with so many calories. But I get the best results with it. With regular margarine or butter, they turn out to be melted.
