Ingredients for 1 servings:

  • 1 orange(s), organic
  • 75 g butter
  • 175 g sugar
  • 2 eggs
  • 200 g pumpkin flesh, cooked
  • 80 ml water
  • 175 g flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp clove powder
  • 75 g nuts of your choice, chopped or ground
  • 100 g raisins

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

simple, very moist cake from the loaf pan

Wash and peel the orange, remove the seeds, then puree about half of the peel and the flesh together with the pumpkin flesh and water. Melt the butter. Combine the sugar and butter, then beat in the eggs one at a time and beat until fluffy. Combine the flour, baking soda, baking powder, salt, cinnamon, cloves, and nuts. Stir the pumpkin-orange mixture into the egg-sugar mixture, then briefly stir in the flour mixture and fold in the raisins. Pour the batter into a 30cm loaf pan and bake at 175°C (top/bottom heat) for 1 hour, or until the batter no longer sticks to the toothpick when inserted into a skewer.
