Pumpkin Vegetables with Ribbon Noodles

The perfect pumpkin vegetables with ribbon noodles recipe with a picture and simple step-by-step instructions.

  • 1 Red Onion
  • 200 ml Vegetable broth
  • 100 ml Milk
  • 150 g Gorgonzola
  • Salt
  • Pepper
  • 250 g Tagliatelle
  • 350 g Hokkaido pumpkin
  • 3 Spring onions
  • Olive oil
  1. Peel and dice the onion and sauté in a little oil, deglaze with the stock and the milk.
  2. Dice the Gorgonzola, stir into the sauce, season with salt and pepper and simmer for 10 minutes.
  3. Wash the pumpkin, divide it, remove the seeds and dice it, clean the spring onions, wash them and cut into rings.
  4. Now fry the pumpkin in a pan with hot oil, add spring onions and fry everything not too soft. Season with salt and pepper.
  5. Now cook the pasta, drain and add some cooking water with the pasta to the sauce.
