Bean and sausage stew

Ingredients for 3 servings:

  • 1 onion(s)
  • 400 g potatoes
  • 1 clove(s) garlic
  • 1 tbsp clarified butter
  • 1 tsp tomato paste
  • 750 ml vegetable stock
  • 1 bay leaf
  • 300 g beans, green
  • 300 g meat sausage
  • lemon juice
  • savory

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the onion, dice the potatoes, and mince the garlic. Sauté the onions in clarified butter, stirring in the tomato paste. Then add the potatoes and sauté. Add the broth, bay leaf, savory, and garlic. Simmer for 10 minutes, then add the beans. Season the stew with salt, pepper, and lemon juice, and simmer for another 10 minutes. Cut the sausages diagonally into 2-3 cm thick slices and add them. Let them simmer for a few more minutes over medium heat.
