Glückstadt matjes fried in lemon butter, with jacket potatoes and chive sour cream

Ingredients for 5 servings:

  • 5 herring fillets
  • n. B. Flour for rolling
  • 20 g butter
  • ½ lemon(s)
  • 6 small new potatoes, waxy
  • 3 bunches of chives
  • 3 cups sour cream
  • 3 cups of crème fraîche
  • 4 tbsp Pernod
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch(s) of sugar, if desired

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil the new potatoes for about 20 minutes, rinse well, and let stand. The skin can stay on if you like. For the chive sour cream, chop the chives. Place the sour cream, crème fraîche, and chives in a bowl and mix well. Add 4 tablespoons of Pernod and the spices. A pinch of sugar, if desired. Melt 20g of butter in a pan. Coat the herring in flour and add to the hot butter, frying for two minutes on each side. Squeeze half a lemon over the herring while frying. Plate and serve.
