Ingredients for 4 servings:

  • 4 salted herring
  • 120 g potatoes, bacony
  • 120 g apples
  • some capers
  • 2 gherkins
  • 1 can beans, small white
  • 40 g peas, frozen
  • 60 ml oil
  • 125 ml sour cream
  • 1 tsp mustard

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

The herring is soaked in cold water, cleaned, and cut into small pieces. Then it is tossed with the boiled, finely diced potatoes, the finely diced apples and gherkins, and the capers, beans, and peas (cook the peas in the microwave first). Combine the oil, cream, and mustard and pour over the salad. Mix everything thoroughly. The salad should be prepared at least 1-2 hours before serving so it can chill in the refrigerator. We serve the herring salad on a plate with a bit of lettuce and a slice of egg. It is served with a bread roll.
