Carrot and apple salad

Ingredients for 2 servings:

  • 2 carrots
  • 1 apple
  • 1 bunch of parsley
  • 1 small onion(s)
  • 2 tbsp lemon juice
  • 6 tbsp vinegar
  • 3 tbsp oil (sunflower oil)
  • 1 tsp salt
  • 2 tsp sugar
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

fruity salad with parsley

Wash the carrots and peel them with a vegetable peeler. Grate them on the coarse side of a grater and place them in a bowl. Wash and grate the apple, then add it to the carrots. Peel the onion, finely dice it, and add it. Wash and finely chop the parsley, and add it as well. Mix everything well. Make a dressing from the vinegar, sunflower oil, lemon juice, salt, and sugar and pour it over the salad. Finally, season well with freshly ground pepper.
