Raspberry quark muffins with chocolate flakes

Ingredients for 1 servings:

  • 250 g flour
  • 1 packet of baking powder
  • 1 packet of vanilla pudding powder
  • 1 packet of vanilla sugar
  • 200 g sugar
  • 75 ml oil
  • 100 ml milk
  • 125 g quark
  • 250 g raspberries, frozen is also possible
  • 2 eggs
  • n. B. Almond(s), ground
  • e.g. chocolate flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Separate the eggs and then beat the egg yolks with the sugar until frothy. Then add the flour, oil, milk, baking powder, ground almonds, chocolate flakes, and pudding powder and mix everything together again well. Now add the low-fat quark and mix well. Finally, carefully fold in the beaten egg whites and raspberries. Pour the batter into the muffin cups, filling them no more than ⅔ full, and sprinkle with a few more chocolate flakes. Bake in a preheated oven at 180°C for approximately 30-40 minutes.
