Thuringian Roast Meat

The perfect thuringian roast meat recipe with a picture and simple step-by-step instructions.

marinade

  • Mustard hot
  • 1 piece Onion
  • 1 piece Clove of garlic
  • 3 disc Ginger
  • 2 piece Bay leaf fresh
  • Peppercorns, juniper berries, mustard seeds
  • 0,5 liter Black beer

anything else

  • Salt pepper
  • 4 tbsp Mustard medium hot
  • 3 tbsp Ketchup or barbecue sauce

Prepare meat

  1. Press the comb discs flat with your hand (NO meat tenderizer) and cream with the spicy mustard. Place in a sealable bowl.

  1. Cut the onion and garlic into slices (peel beforehand). Add all marinade ingredients to the bowl with the meat and pour black beer over it until everything is covered. Place in a cool place and let it steep (ideally 24 hours).

Cooking etc.

  1. Remove the meat slices from the marinade, pat dry, season with salt. Cook on the grill (alternatively grill pan). In the meantime, remove the onions from the marinade, drain them, dry them on paper towels and roast them in a little oil in the pan until golden brown. Mix the medium-hot mustard and ketchup well. Season the finished roast with a little sea salt and pepper. Serve the roast with the onions, potato salad and mustard ketchup.
