Fried Scallops in Noodle Nest

- 15 Pc. Scallops
- 300 g Pasta
- 1 Pc. Pomegranate
- 1 Pc. Lemon
- 1 tbsp Sugar brown
- 200 ml Coconut milk
- 2 tbsp Olive oil
- Salt and pepper
- Fill a saucepan with about a liter of water, bring it to a boil and add a little salt. Put the noodle nest in the water and cook for about 4 minutes. Take out and rinse under cold water. Now put the noodle nest back into the pot and heat it up at a low temperature.
- While heating, add a tablespoon of brown sugar. Stir slowly until the sugar caramelizes. Then add 200 milliliters of coconut milk and stir.
- Fry the scallops in a little olive oil for 2 to 3 minutes, depending on their size, and season with salt and pepper to taste.
- For the dressing, squeeze a lemon and put the juice with salt, pepper, a tablespoon of olive oil, fresh parsley and the pomegranate seeds in a bowl. Stir everything.
