Berry Meringue Cake

The perfect berry meringue cake recipe with a picture and simple step-by-step instructions.

  • 300 g Frozen berry mix
  • 50 g Sugar
  • 1 packet Baking powder
  • 1 tbsp Lemon juice
  • 65 g Soft butter
  • 1 tbsp Vanilla sugar
  • 50 g Sugar
  • 1 Egg
  • 100 g Spelled flour
  • 1 pinch Salt
  • 15 g Vanilla sugar
  • 2 Protein
  • 100 g Sugar
  • 100 g Rapeseed oil
  • Parchment paper
  1. Defrost and drain the berries.

Preheat the oven to 180 degrees!

  1. Mix the butter, sugar and vanilla sugar well until the sugar is dissolved. Mix flour and baking powder and stir in an egg! Line the baking pan with baking paper and grease the edge of the baking pan with a little rapeseed oil!
  2. Spread the dough evenly in and bake in the preheated oven for about 15 minutes!
  3. Meanwhile, whip up egg whites with a pinch of salt and gradually add sugar! Carefully fold in the berry mixture and distribute it on the pre-baked base and bake for another 25-30 minutes!
  4. Then cool in the mold for another 10 minutes, then take it out and let it cool down on a cake rack!
