Crunchy Schnitzel with Mashed Potatoes and Black Salsify
The perfect crunchy schnitzel with mashed potatoes and black salsify recipe with a picture and simple step-by-step instructions.
Black salsify:
- 500 g Salsify fresh
- 40 g Butter
- 40 g Spelled flour type 630
- 200 ml Vegetable broth
- 100 ml Cream
- 1 pinch Seasoned salt from my KB
- 1 pinch Garlic pepper from my KB
- 1 pinch Freshly grated nutmeg
- 1 pinch Telly cherry pepper
- 1 pinch Lemon juice
Crispy schnitzel:
- 1 kg Pork neck schnitzel
- 1 kg Seasoned salt from my KB
- 1 kg Garlic pepper from my KB
- 250 g Potato flour
- 2 Eggs
- 1 Sip Mineral water
- Rapeseed oil
Mashed potatoes:
- 1 kg Potatoes
- 150 ml Milk
- 150 ml Cream
- 1 tbsp Butter
- 1 tbsp Fleur de sel
- 1 tbsp Telly cherry pepper
- 1 tbsp Freshly grated nutmeg
Black salsify:
- I first prepared black roots according to Biggi´s easy and clean tip! SEE BtbspOW!!! After that, they can get cold first, but they don’t have to! 🙂
Crispy schnitzel:
- I steak the meat first. In my opinion, they’ll get more tender and soak up the seasoning better. Then they are seasoned with seasoned salt and garlic pepper, eggs and mineral water are whisked together and the schnitzel is bathed in them :-), then breaded in potato flour! Put aside!
Preheat the oven to 50 degrees!
Mashed potatoes:
- Peel and roughly dice the potatoes and cook in a pressure cooker for 4-5 minutes. Or in a normal pot in salted water for 10-20 minutes, depending on the size!
Black salsify:
- Peel and roughly chop the black roots. Heat the butter in a saucepan and stir in the flour, quickly add the stock while stirring constantly, briefly bring to the boil and add the cream! Season with salt, garlic pepper, pepper and nutmeg. Refine with a little lemon juice! Add black salsify and cook on low heat for about 10 minutes!
Crispy schnitzel:
- Bake the crispy schnitzel one after the other in hot fat and keep warm in the oven!
Mashed potatoes:
- Sieve the potatoes and then coarsely mash them with cream, milk and butter! Season with salt, pepper and nutmeg!
- Serve everything together! 🙂
