Le Blanc Manger Aux Fruits Rouge (almond Milk Pudding with Red Fruits)

  • 625 ml Whole milk
  • 75 ml Almond syrup
  • 100 g Skinned almonds
  • 3 tbsp Sugar
  • 1,25 Pc. Vanilla pod cut open
  • Bitter almond flavor
  • 6,25 leaf Gelatin
  • 250 ml Whipped cream
  • Red fruit jelly
  1. Put the milk, almond syrup, almonds, sugar and vanilla pods in a saucepan. Bring the whole thing to the boil and then let it steep for 5 minutes over a low heat. Soak the gelatine in cold water.
  2. Pour the milk mixture through a fine sieve, leaving only liquid, no almond pieces. Add a few drops of bitter almond flavor to taste. Take the gelatine out of the water and squeeze it out.
  3. Dissolve the gelatin in the hot milk mixture. Chill the whole thing but don’t let it set. Stir the mixture until smooth and then fold in the whipped cream. Pour the mixture into small molds and then let it set in the refrigerator for at least 5 hours. Turn out and cover with red fruit jelly.
