Baking: Cherry Strudel with Amaretto

The perfect baking: cherry strudel with amaretto recipe with a picture and simple step-by-step instructions.

The strudel dough

  • 250 g Wheat flour type 550
  • 2 tablespoon Neutral oil
  • 1 pinch Salt
  • 1 teaspoon White vinegar
  • 125 ml Water

The cherry filling

  • 1 kg Pitted sweet cherries
  • 1 packet Custard powder
  • 3 tablespoon Powdered sugar
  • 100 ml Water
  • 50 ml Amaretto

  • 50 g Butter
  • 6 tablespoon Breadcrumbs or biscuit crumbs

The strudel dough

  1. Making strudel dough is not that difficult if you really pay attention to a few things.
  2. Mix the flour with the salt, oil and vinegar. Then slowly add water in portions and knead the whole thing into a shiny dough. It depends on the flour how much water you ultimately need. 125 ml is only a guideline. Then knead the dough with your hands for about 10 minutes.
  3. IMPORTANT !!!!! Shape the dough into a ball and let it rest under a HOT porcelain bowl for at least half an hour. To do this, either rinse the bowl with boiling water or heat it in the microwave.
  4. Divide the dough in half and spread the first half on a kitchen towel. The dough is very elastic after resting and you can pull it out so thin that the pattern of the kitchen towel can be seen.

The cherry filling

  1. Put the pitted fruits in a large saucepan. Mix the vanilla pudding powder and powdered sugar and add to the cherries together with the water. Bring everything to the boil, stirring constantly. If the mass sticks, add a little more water. Cook until the pudding powder starts to thicken. Finally stir in the amaretto and let it cool down.

The finish

  1. Brush the pulled out dough with melted butter and sprinkle with half of the breadcrumbs.
  2. Place half of the cherry filling lengthways in the middle, fold the ends of the dough over the filling and place the strudel in a greased baking dish. Do the same with the second half of the batter, breadcrumbs and cherries.
  3. Bake the strudel in the preheated oven at 180 degrees for about 1 hour until the dough has taken on a nice color.
  4. Sprinkle the finished strudel with powdered sugar and serve with cream.
