Smoked Trout Fillet with Avocado, Apple, Cucumber, Rocket and Spinach Leaves

- 300 g Smoked trout fillet without bones
- 5 disc Pumpernickel
- 1 Pc. Avocado
- 1 Pc. Apples
- 1 Pc. Cucumber
- 125 g Rocket
- 125 g Young spinach leaves
- 1 bunch Dill
- 200 g Sweetened skimmed milk
- 2 tsp Honey
- Salt
- Pepper
- Coriander
- 1 tbsp Lemon juice
- Mix the tip milk with 2 teaspoons of honey and the fresh dill tips, peel the cucumber and apple and cut into small cubes, then fold into the mixture and mix with the rocket and the stalked spinach leaves, n.B. season with coriander.
- Puree the avocado into a cream, add the lemon juice, salt and pepper to taste. Spread the cream on the pumpernickel and place the trout fillet pieces on the bread. Arrange both units side by side on a starter plate.
