Pumpkin Soup with Ginger and Orange Juice

The perfect pumpkin soup with ginger and orange juice recipe with a picture and simple step-by-step instructions.

  • 1 Kg Pumpkin cubes
  • 50 g Butter
  • 1 Pc. Onion
  • 1 toe Garlic
  • 1 tbsp Ginger, fresh, chopped
  • 1 tsp Espelette pepper
  • 1 tsp Sweet paprika
  • 1 tsp Curry powder
  • 1 tsp Ground cinnamon
  • 2 Pc. Tomatoes
  • 500 ml Orange juice with pulp
  • 1 liter Chicken broth
  • Salt
  1. Divide the pumpkin, peel and dice the pulp. Dice the onion and clove of garlic. Peel and dice the ginger.
  2. Melt the butter in a large saucepan. Add the onion and garlic cubes as well as the ginger and the other spices and sauté briefly.
  3. Add the pumpkin cubes. Deglaze with the orange juice and add the chicken stock. Cook everything for about 30 minutes.
  4. Remove the saucepan from the heat and puree the soup with the food processor. Season to taste with salt.
