Glass Noodle Salad with Teriyaki Beef
The perfect glass noodle salad with teriyaki beef recipe with a picture and simple step-by-step instructions.
- 100 g Glass noodles
- 1 Chilli pepper
- 2 Garlic cloves
- 100 g Sugar snap
- 5 Sweet-. Paprika
- 2 Mini cucumbers
- 2 Spring onions
- 1 bunch Coriander
- 3 tbsp Soy sauce
- 1 Lemon, juice and zest
- Honey
- Salt
- Black pepper from the mill
- 200 g Beef steak
- 5 tbsp Teriyaki sauce
- Sesame
- Peanut oil
- Cut the beef into fine strips and place in a bowl. Add the teriyaki sauce and mix well and leave everything covered in the refrigerator for 4 hours.
- Scald the glass noodles with hot water and soak for about 15 minutes, then drain well over a sieve and then put them in the salad bowl and cut the glass noodles into bite-sized pieces with scissors. Cut the chilli pepper into fine rings and add, also grate the garlic cloves. Add the soy sauce and mix everything very well.
- Cut the snow peas into fine strips and add to the glass noodles. Halve the sweet peppers and then finely dice and also add to the salad bowl. Quarter the mini cucumbers and cut into fine strips, cut the spring onions into fine rings and add both to the glass noodles. Now add the lemon juice and lemon zest and mix everything very well.
- Season to taste with salt, pepper and honey, cover well and let steep in the refrigerator for at least 4 hours – the longer, the better.

- Heat some peanut oil in a pan, add the teriyaki beef and fry for about 4 minutes, turning and then sprinkle with sesame seeds and fry for another 1 minute.
- Arrange the salad in salad bowls, add some freshly chopped coriander and serve the meat on top.
