Glass Noodle Salad with Teriyaki Ground Beef

The perfect glass noodle salad with teriyaki ground beef recipe with a picture and simple step-by-step instructions.

  • 100 g Glass noodles
  • 2 Red Pointed peppers, pitted and cut into fine strips
  • 1 bunch Spring onions, cut into fine strips
  • 1 bunch Coriander, roughly chopped
  • 500 g Ground beef
  • 4 Garlic cloves, finely chopped
  • 5 tbsp Teriyaki sauce
  • 1 Red Chilli pepper, cut into fine rings
  • 20 g Ginger, finely grated
  • 1 Lime, the juice
  • 5 tbsp Soy sauce
  • 3 tbsp Sesame oil
  • Salt
  • Pepper
  • 2 tsp Cane sugar
  • Sunflower oil
  1. Pour boiling water over the glass noodles, leave to swell for 5 minutes, then strain and drain well. Then put in a salad bowl and cut into bite-size with the scissors. Then add the pointed pepper, spring onions and coriander.
  2. Heat some sunflower oil in a pan and fry the minced meat in it until it is nice and crumbly and, above all, through it, it can get toasted aromas. In the last 2 minutes add the finely chopped garlic and let it simmer, then deglaze with the teriyaki sauce and season with salt and pepper and pour over the glass noodles while still hot.
  3. Put the chilli rolls and the grated ginger in a bowl, add the lime juice, the sugar and the soy sauce and stir everything well and beat the sesame oil over it and then pour over the minced meat and the glass noodles, mix well, leave to stand for about 30 minutes and then serve.
