Colorful Vegetable Paella
The perfect colorful vegetable paella recipe with a picture and simple step-by-step instructions.
- 1 Cup Basmati rice
- 2 cups Water with a little salt
- 100 g Mushrooms
- 100 g Fresh green beans
- 1 Onion
- 1 Peppers yellow
- 200 g Cherry tomatoes
- 100 ml Vegetable broth
- Turmeric
- Noble sweet paprika powder
- Oil
- Boil rice in 2 cups of water and cook for 5 minutes with the lid closed. Then turn off the hotplate and let it soak in the residual heat.
- Cut the ends off the beans and cut into 2 cm pieces.
- Dice the bell peppers. Quarter the mushrooms. Finely dice the onion. Quarter tomatoes.
- Heat the oil in a deep pan and fry the beans for 5 minutes. Then add the mushrooms, peppers and onions and fry for 3 minutes.
- Add rice. Stir in approx. 1/2 teaspoon paprika and turmeric. Pour in the vegetable stock and put the lid on the pan. Reduce the heat to medium and fry for 8-10 minutes without stirring. Add tomatoes. Then stir again briefly.
