Mum’s Fine Potato Soup

The perfect mum’s fine potato soup recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes
  • 1 bunch Soup greens
  • 1 liter Meatsoup
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Nutmeg
  • 1 tablespoon Butter
  • 2 Egg yolk
  • 125 Milliliters Cream
  1. Peel, wash and cut the potatoes into small cubes. Clean and wash the soup greens and cut very finely. Bring the potatoes and soup greens with the meat stock to a boil and cover and cook over a mild heat for 20 minutes
  2. Pass the soup through a sieve! You can also puree them with a blender, but this changes the taste considerably and not to the advantage. I therefore prefer to do the work of “passing”
  3. Heat the soup again over a mild heat, season with salt, pepper and nutmeg.
  4. Whisk the egg yolks with the cream. Remove the soup from the heat and stir in the egg yolk cream.
  5. Heat the soup again, but do not let it boil again

Variants:

  1. 1.) You can also pull in crabs and / or salmon at the end. 2.) Depending on your taste, you can sprinkle fried cubes of bacon and browned onion cubes over the soup. 3.) Sausages go well with this soup too;)
