Potato and Carrot Stew
The perfect potato and carrot stew recipe with a picture and simple step-by-step instructions.
- 5 medium sized Floury potatoes
- 6 medium sized Carrots
- 1 size Diced onion
- 1 tbsp Mild coconut fat
- 2 liter Fresh vegetable broth
- Homemade
- 4 Branches Fresh parsley
- Fresh pepper
- Peel, wash and roughly cut the potatoes – peel, wash and roughly grate the carrots – peel and cut the onions – wash and cut the parsley
- Fry the onions in coconut oil in a saucepan, add the potato pieces and the shredded carrots, pour in the vegetable stock, bring to a boil and cook, simmer for a good 30 minutes.
- Finally stir in the chopped parsley and let everything steep for another 30 minutes. In the meantime, warm up the plates and call for dinner 😉
- All that was needed was freshly ground pepper …..
- 5 …. and there is also left for a second meal 🙂
