Vegan Potato Noodles
The perfect vegan potato noodles recipe with a picture and simple step-by-step instructions.
- 6 Large, floury potatoes, cooked
- 125 g Flour
- 3 tbsp Soy flour
- Smoothed with:
- 9 tbsp Water
- 0,5 tsp Salt
- 1 pinch Freshly grated nutmeg
- Oil
- Mash the potatoes as finely as possible (if you have them, pass them through a potato press). Use all the ingredients to make a dough that is not too sticky. You should be able to form small rolls with it without any problems. Otherwise gradually add a little more flour.
- Roll the potato noodles. Bring salted water to a boil in a toof and let the potato noodles simmer in portions. As soon as the potato noodles rise, skim them.
- Fry the potato noodles in portions in hot oil until golden brown.
- In the picture you can see the potato noodles (rolled by my son), red cabbage and LikeMeat-Geschnetzeltes (a purely vegetable alternative to meat, which even my son does not recognize as such, but thinks it is “real”).
