Ingredients for 4 servings:
- 500 g jacket potatoes
- 500 g zucchini, small
- 250 ml vegetable stock
- 1 garlic clove(s)
- 1 tsp mustard, hot
- 1 tsp vinegar
- 1 tbsp parsley, chopped
- 1 tsp oregano
- salt and pepper
- 6 tbsp oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the potatoes and dice them while still warm. Dice the zucchini, bring to a boil in the broth, and let it simmer for 5 minutes; they should still be firm to the bite. Add the zucchini to the potatoes. Crush the garlic clove, mix with the mustard, vinegar, herbs, salt, pepper, and oil, and pour over the warm salad ingredients. Serve immediately.
