Soljanka: Typical GDR Stew
The perfect soljanka: typical gdr stew recipe with a picture and simple step-by-step instructions.
- 3 Pc. Onions
- 80 g Streaky bacon
- 50 g Cooked ham
- 50 g Raw ham
- 100 g Boiled sausage
- 2 Pc. Red peppers
- 1 Pc. Carrot
- 5 Pc. Gherkins
- 3 tbsp Tomato paste
- 2 tbsp Paprika pulp (Ajvar)
- 250 ml Cucumber water
- 1 Cup Sauerkraut drained fresh
- 1 liter Broth
- 1 tbsp Capers
- 1 Pc. Garlic
- 1 Pc. Bay leaf
- 1 cups Sour cream
- 1 pinch Marjoram
- 1 pinch Salt
- 1 pinch Pepper
- Peel and finely chop the onions, chop the bacon. Also chop the ham, sausage, bell pepper and carrot and add. Finely chop the garlic and add, stir in the tomato and pepper pulp. Deglaze everything with cucumber water and stock.
- Add the sauerkraut, capers and bay leaf and braise. Cut the pickles into slices and stir in. Season to taste with the spices and stew on a low flame for 30 minutes. Serve with a dollop of sour cream and a lemon wedge.
