Couscous Patties with Herb Dip

The perfect couscous patties with herb dip recipe with a picture and simple step-by-step instructions.

for the couscous patties

  • 1 piece Onion small
  • 100 g Carrots
  • 1 tbsp Butter
  • 1 tsp Curry powder
  • 100 ml Vegetable broth
  • 100 g Couscous
  • 1 pinch Ground cumin
  • 0,5 tsp Chilli flakes
  • 1 tbsp Chopped parsley
  • 1 piece Egg, free range
  • 1 tbsp Quark
  • Vegetable oil for frying

for the herbal dip

  • 100 g Quark
  • 100 g Natural yoghurt
  • 1 piece Clove of garlic
  • 1 tbsp Herbs, parsley, chives, dill …
  • 1 tsp Freshly squeezed lemon juice
  • 1 pinch Sugar
  • Salt and pepper

Preparation of the couscous patties

  1. Skin the onion, wash it and finely dice it. Peel and grate the carrots.
  2. Melt the butter in a small saucepan and sauté the onion cubes for 2 minutes until translucent. Add the carrots and stew for 3 minutes, sprinkle with curry and roast gently for 30 seconds until it smells pleasant.
  3. Deglaze with vegetable stock. Add the cumin, chilli flakes, then stir in the couscous. Take the pot off the stove and cover it and let it soak for 10 minutes, then loosen it up with a fork.
  4. Mix the couscous mixture, quark, an egg and freshly chopped parsley in a bowl. Season to taste with salt and pepper and let steep for 30 minutes.
  5. Using moistened hands, form 6 patties from the couscous mixture. Heat the vegetable oil in a pan and fry the couscous patties on both sides until golden. Remove and drain on kitchen paper.

Preparation of the herbal dip

  1. Peel and finely chop the garlic clove. Wash, dry and cut herbs. Mix the quark, natural yoghurt, garlic and herbs well in a bowl. Season to taste with salt, pepper, lemon juice and a pinch of sugar.

Serving

  1. Arrange the crispy fried couscous patties on preheated plates. Place the herb dip on the side and garnish as desired. Various vegetables and also salad can be served with it.
  2. I added a few orange wedges and we think the orange flavor goes wonderfully with spicy patties.

  1. The couscous patties can be frozen without any problems. They also taste very good cold and are well suited as school and travel provisions. A fine accompaniment to all curry dishes, soups, stews and lavish salads.
