Zucchini and Carrot Fritters with Tomato Salad

The perfect zucchini and carrot fritters with tomato salad recipe with a picture and simple step-by-step instructions.

  • 1 middle Zucchini fresh
  • 1 pole Spring leek
  • 1 Free range eggs
  • 1 Medium sized carrot
  • 1 tbsp Potato starch
  • 0,5 Teaspoon (level) Caraway seed
  • Salt and pepper
  • Oil for frying
  1. Wash the zucchini (about 400 g) and roughly slice. Do the same with the carrot. Clean the spring onions, cut in half and finely.
  2. Mix with an egg, a little potato starch and the spices.
  3. Fry on both sides in a little neutral oil in a pan until crispy. We had tomato salad with it.
