Zucchini and Carrot Fritters with Tomato Salad
The perfect zucchini and carrot fritters with tomato salad recipe with a picture and simple step-by-step instructions.
- 1 middle Zucchini fresh
- 1 pole Spring leek
- 1 Free range eggs
- 1 Medium sized carrot
- 1 tbsp Potato starch
- 0,5 Teaspoon (level) Caraway seed
- Salt and pepper
- Oil for frying
- Wash the zucchini (about 400 g) and roughly slice. Do the same with the carrot. Clean the spring onions, cut in half and finely.
- Mix with an egg, a little potato starch and the spices.
- Fry on both sides in a little neutral oil in a pan until crispy. We had tomato salad with it.
