Tomato and Zucchini Salad
The perfect tomato and zucchini salad recipe with a picture and simple step-by-step instructions.
- 500 g Cocktail tomatoes
- 300 g Zucchini
- 0,5 Yellow peppers
- Olives to taste
- Basil, lemon balm fresh
- 1 Onion cut into half rings
- 2 essl Olive oil
- Salt pepper
- Some lime juice
- 100 g Shepherd’S cheese
- Quarter the tomatoes, cut the zucchini and paprika into small cubes. Chop the basil and lemon balm into small pieces. Sprinkle the zucchini with salt and drain for about 1 hour.
- Mix the oil, lime juice, herbs, salt and pepper together.
- Mix the tomatoes, zucchini, bell pepper and the onion with the dressing.
- Finally fold in the shepherd’s cheese and garnish with a few basil leaves
- 5th tip: tastes best when the salad goes through for at least two hours.
