Tomato and Zucchini Salad

The perfect tomato and zucchini salad recipe with a picture and simple step-by-step instructions.

  • 500 g Cocktail tomatoes
  • 300 g Zucchini
  • 0,5 Yellow peppers
  • Olives to taste
  • Basil, lemon balm fresh
  • 1 Onion cut into half rings
  • 2 essl Olive oil
  • Salt pepper
  • Some lime juice
  • 100 g Shepherd’S cheese
  1. Quarter the tomatoes, cut the zucchini and paprika into small cubes. Chop the basil and lemon balm into small pieces. Sprinkle the zucchini with salt and drain for about 1 hour.
  2. Mix the oil, lime juice, herbs, salt and pepper together.
  3. Mix the tomatoes, zucchini, bell pepper and the onion with the dressing.
  4. Finally fold in the shepherd’s cheese and garnish with a few basil leaves
  5. 5th tip: tastes best when the salad goes through for at least two hours.
