Chicken Hearts in Cherry Espresso Sauce on Green Rice Tower

- 250 g Roast Chicken Hearts Fresh
- 2 piece Red onions
- 1 Cup Espresso
- 1 Cup Water
- 1 teaspoon Salt
- 1 teaspoon Spiced pepper
- 1 tablespoon Sour cherry jam with balsamic vinegar from my KB
- 1 tablespoon Clarified butter
- 80 g Long grain rice
- 1 piece Leek
- 10 Stalk Parsley crispy fresh
The preparation
- Water the hearts, then dry them on a kitchen towel.
- Melt the clarified butter in the pan, add the hearts, sear them, reduce the heat.
- Halve the onions, cut into strips, add to the pan and braise with them.
- Put on the water for the rice, add the rice, bring to the boil and turn the heat down.
- Return your eyes to the pan and mix the water and freshly brewed espresso into the hearts. Let something boil down.
- The rice is ready. Stir in the leek cut into rings. Cover and let steep.
- Now the hearts are ready. Stir in the jam and season well with the spices.
- Drain any remaining water in the rice, chop the parsley and fold in.
- Make a turret with the help of a dessert ring, put the hearts in a delicious sauce around the rice tower, basil as a topping – done. I wish good appetite.
