- 500 g Couverture
- 5 Pc. Protein
- 1 pinch Salt
- 130 g Sugar
- 2 Pc. Squeezed lemons
- 250 g Raspberries
- Let the couverture melt in a water bath. Beat the egg whites with a pinch of salt until stiff, first slowly trickle in the sugar and then add the lemon juice, spoon by spoon.
- Puree the raspberries with a little sugar and lemon zest and season to taste.
- Put the egg white mass in a piping bag (if there is no piping bag, cut a small corner off a freezer bag at the bottom is also possible).
- Squirt the mixture onto a plate, pour the liquid couverture over it and drape the raspberry mixture around it.
