Caramelized Onion Cappuccino with Gorgonzola Foam

The perfect caramelized onion cappuccino with gorgonzola foam recipe with a picture and simple step-by-step instructions.

  • 8 Pc. Onions
  • 5 tbsp Powdered sugar
  • 1200 ml Vegetable broth
  • 1 pinch Ground pepper white
  • 500 ml Cream
  • 1 tbsp Gorgonzola
  • 1 Pc. Baguette
  1. Cut the onions into rings, spread them out on a baking sheet and dust with powdered sugar. All onions should be sprinkled with powdered sugar all around.
  2. Put the baking sheet in the oven for a good 2 hours at 150 degrees (top / bottom heat). Heat the broth.
  3. After the 2 hours, scrape the onions, which have now darkened, from the baking tray and add to the stock, do not let them boil anymore. Season to taste with pepper.
  4. Heat the gorgonzola with the cream, finely chop with a hand blender. Pour the hot cream into a siphon and pressurize with 2 cartridges.
  5. Pour the soup into beautiful glasses and immediately squirt the foam onto the soup. Serve with fresh baguette.
