Veggie Skewers
The perfect veggie skewers recipe with a picture and simple step-by-step instructions.
Skewers:
- 250 g Smoked tofu
- 1 piece Zucchini
- 2 piece Nectarine
- 1 piece Onion
- 1 piece Red peppers
- 2 piece Clove of garlic
- 1 tablespoon Rapeseed oil
Marinade:
- 3 tablespoon Lemon fruit juice
- 3 tablespoon Olive oil
- 2 piece Garlic cloves pressed
- 3 teaspoon Sweet paprika
- 1 pinch Chilli from the mill
- 1 pinch Sea salt from the mill
- 1 pinch Black pepper from the mill
Marinade:
- For the marinade, mix lemon juice with olive oil and the pressed garlic, stir in the sweet paprika and season with the chilli, sea salt and a pinch of pepper.
Skewers:
- Wash the vegetables and the smoked tofu thoroughly, pat dry and cut into cubes for the skewers. Peel the garlic cloves and cut into thin slices. Core the nectarines and also cut into slices. Skewer peppers, zucchini, tofu, nectarine slices, garlic slices and onion alternately on the skewers. Thoroughly coat the finished skewers with the marinade and season. Let something move in. Then fry in rapeseed oil, arrange and serve.
Tip:
- So that the marinade can penetrate well, it is advisable to marinate the marinade 2 hours beforehand. If something is left of the tofu, fruit and vegetables, you can mix this with the rest of the marinade in a saucepan and boil it briefly. This makes a good side dish that differs in taste from the fried skewers.
Garnish:
- I served home-baked farmer’s bread as a side dish.
