Juicy Meatloaf
The perfect juicy meatloaf recipe with a picture and simple step-by-step instructions.
- 500 g Ground beef
- 2 Discs Toast
- 1 Egg
- 1 tbsp Mustard
- 6 Soft apricots, cut into fine cubes
- 10 Dried tomatoes, cut into fine cubes
- 2 Garlic cloves, finely grated
- 1 tbsp Lime zest
- Espelette pepper
- Salt
- Black pepper from the mill
- 100 ml Beef stock
- Finely crumble the toast in a bowl, add the minced meat, as well as the egg and mustard. Now salt and pepper and add the Espelette pepper to taste. Now add the finely diced apricots and finely diced dried tomatoes. Finally, grate the garlic and the lime zest.
- Now knead everything into a homogeneous dough, shape the meatloaf and put it in an ovenproof dish and bake in the oven preheated to 180 degrees for 40 – 50 minutes. Then take it out and – covered with aluminum foil – let it rest for a few minutes and then cut it.
- We only had cauliflower with it. If you add a side dish, you can make a sauce from the meat stock – sweat a finely diced shallot, briefly toast a tablespoon of tomato paste, add the meat stock and reduce it to about half. Then assemble with ice-cold butter and season to taste.
