Juicy Schnitzel Brought Under Hood
The perfect juicy schnitzel brought under hood recipe with a picture and simple step-by-step instructions.
- 4 Pc. Veal or pork schnitzel
- 1 glass Pesto Genovese
- 250 g Cherry tomatoes
- 2 Bullets Mozzarella
- Beat the schnitzel, season with salt and pepper, bread in flour, egg and breadcrumbs and fry in hot clarified butter for 2-3 minutes on each side until golden brown. Place on a baking tray lined with baking paper. Preheat the grill.
- Brush the fried schnitzel with 1 tbsp pesto each. Halve the washed tomatoes and spread on top of the pesto. Cover with Mozarella slices. Bake under the grill for about 5 minutes.
- There was also a mixed salad and baguette.
- The schnitzel in the photo without tomatoes was not made because I ran out of them. Our youngest extra sausage just doesn’t like warm tomatoes. These were then found in the salad.
