Chocolate Tart (without Flour) – Chocolate Cake

  • 300 g Dark chocolate for in the batter
  • 100 g Dark couverture
  • 100 g Butter
  • 100 g Sugar
  • 1 pinch Salt
  • 100 g Almond flour ger. Almonds e.g. from REWE
  • 16 g Almonds or hazelnuts
  • 50 g Sugar to caramelize
  • 5 g Gold powder – candurin
  1. Separate the eggs and beat the egg whites with the salt until stiff. Melt the chocolate in a double boiler and add the butter and sugar. As soon as everything has dissolved, fold in the almonds and the beaten eggs and finally fold in the egg whites. Fill into a greased form and bake at 160 degrees in the preheated oven – middle rack – for about 30 minutes
  2. Let cool down a little – melt the 100 g couverture and pour it onto the tart. Let the sugar caramelize in a pan and pull the hazelnuts or almonds through the caramel and place on baking paper. After it has cooled down, place it on the cake and, if necessary, apply the gold powder or gold dust.
