Ingredients for 1 servings:

  • 500 g dark chocolate, broken into small pieces
  • 8 eggs
  • 100 g sugar
  • 250 g butter
  • 75 ml brandy (wine brandy)
  • powdered sugar

Instructions

Whisk the sugar and eggs until they form a white, firm mixture (this should take about 10 minutes). Melt the chocolate and butter in a double boiler, stirring constantly. Then combine with the egg mixture and brandy and pour into a baking pan. A 30.5 cm diameter pan is ideal, but a 26 cm pan will also work. The cake needs 10-15 minutes to bake at 200°C fan-assisted oven or 220°C top/bottom heat. It’s ready when it’s still a little wobbly to the touch. Allow to cool, sprinkle with powdered sugar if desired, and serve with whipped cream.
