Erika’s Mussels globetrotters

The perfect erika’s mussels globetrotters recipe with a picture and simple step-by-step instructions.

For the brew

  • 5 Pc. Carrots
  • 3 sheet Celeriac
  • 1 Pc. Onion
  • 1 Pc. Asian garlic bulb
  • 3 Pc. Leek
  • 250 ml White wine
  • 250 ml Fish broth
  • 1 Pc. Lemon
  • 1 Pc. Bay leaf
  • 1 pinch Sugar
  • 1 pinch Lemongrass
  • Sea-Salt
  • Celery salt
  • Cayenne pepper
  • 3 tbsp Butter
  • Fresh dill
  • Parsley crispy fresh

“Gerichte-Geschichte”

  1. We have always liked to eat seafood and here in Denmark, where we get it fresh from the Limfjord, even more regularly. In order to get a special brew you need a wide combination of different tastes and so simple “sailor style” mussels became our variant “globetrotters”.

preparation

  1. Soak and clean the mussels, sort out damaged mussels. Cut the vegetables.

The brew

  1. Sweat the onion and garlic in butter, gradually add the remaining chopped vegetables, briefly toast.
  2. Deglaze with wine (Chilean Sauvignon Blanc) and fish stock. Add some fresh dill and parsley and let simmer for about 5-10 minutes.
  3. Season with salt, celery salt, pepper and a pinch of sugar, add a little zest of a lemon, a bay leaf and lemongrass.
  4. Now add the mussels to the stock. Salt lightly, pour the butter flakes over it and simmer / braise in a closed saucepan until all the mussels open.
  5. Discard unopened mussels.

Serving suggestion

  1. Serve with fresh parsley, dill and sea salt, sprinkle with lemon juice, served with fresh white bread.
