Salmon Tartare with Avocado and Lime Cream

Ingredients
 

  • 100 g Salmon fresh
  • 2 Pc. Spring onion
  • 1 bunch Coriander
  • 0,5 Pc. Lime
  • 1 tsp Honey
  • 3 tbsp Olive oil
  • 1 Pc. Chilli red
  • 1 shot Fish sauce
  • 1 shot Soy sauce
  • 1 pinch Salt and pepper
  • 2 Pc. Fresh avocado
  • 250 g Creme fraiche Cheese
  • 1 pinch Lime zest
  • 1 pinch Chilli flakes
  • 1 bunch Fresh cress
  • 1 Pc. Baguette

Instructions
 

  • Finely dice the salmon and spring onions and mix. Squeeze the limes, mix with the olive oil, honey, chilli, fish sauce and soy sauce and add to the tartare. Season to taste with pepper and salt. Finally chop the coriander and fold in to taste.
  • Crush the avocado with the hand blender, add a dash of lime juice and season with salt and pepper. Add the lime zest to the crème fraîche and also season with salt and pepper. Arrange the salmon tartar in a metal ring on the plate. Then layer the avocado puree on top. Finally, add the lime cream as a third layer. Garnish with chilli flakes and cress.
  • Brush two slices of baguette with olive oil and bake in the oven for 2-3 minutes until golden. Serve with the tartare.
