Salads: Matjessalat

- 6 Herring fillets
- 250 g Sour cream
- 2 tbsp Mayonnaise with Dijon mustard
- 1 greater Holsteiner Cox apple
- 0,5 Cucumber
- 1 small Onion
- 0,5 Bd Chives fresh
- 0,5 Bd Parsely
- 1 branch Tarragon
- 0,5 Green chilli pepper
- Salt
- Black pepper from the mill
- I had bought gold smoking mats from Glückstadt and wanted to make a nice salad. From my inventory I still had a few small cucumbers and chillies from the greenhouse and the herbs from the garden and the apple was left over from the red cabbage.
- Mix the sour cream with the mustard mayonnaise in a large bowl. Peel, quarter and core the apple and cut into small cubes. Peel and finely dice the onion. Peel the cucumber, cut in half and core with a spoon. Add everything to the cream. Wash the chilli pepper and first cut into rings, then finely chop.
- Dab the matjes with a kitchen towel and cut into fine strips. Also add to the cream and stir in. Wash the herbs and cut the chives over the lettuce with the scissors, remove the stems from the parsley and tarragon and chop. Add to the salad. Season to taste with salt and pepper.
- Let everything steep for at least 1 hour and season again to taste. We also had jacket potatoes today. I wish you a good appetite.
- TIP: If all the ingredients are cut relatively finely, there is also a very good salad for the bread.
- Product info: I had Glückstädter Goldrauchmatjes, which is smoked and shrink-wrapped without oil. The quality is excellent and you don’t need to wash or pickle the herring.
