Stuffed Scallop with Homemade Noodles and Owl Foam
The perfect stuffed scallop with homemade noodles and owl foam recipe with a picture and simple step-by-step instructions.
Pasta:
- 500 g Durum wheat semolina
- 4 Eggs
- 1 tsp Salt
- 1 tsp Olive oil
Sauce:
- 1 liter White wine
- 1 liter Vegetable broth
- 0,5 liter Cream
- 250 g Butter
Scallops:
- 8 Scallops
- 150 g Sausage meat
- 1 Pig net fat net
- 1 pinch Salt
- 1 pinch Pepper
- Noodles: Mix all ingredients together and knead into a dough. Then pull it through a pasta machine and briefly cook in boiling salted water.
- 2nd sauce: reduce the wine and broth. Add the cream and let it boil down again. Finally add cold butter and mix the whole thing to the desired consistency.
- Scallops: Cut the mussels open, season a little if necessary and fill with the meat as desired. Then wrap the filled mussels in a fat net and fry them.
