Stuffed Scallop with Homemade Noodles and Owl Foam

Ingredients
 

Pasta:

  • 500 g Durum wheat semolina
  • 4 Eggs
  • 1 tsp Salt
  • 1 tsp Olive oil

Sauce:

  • 1 L White wine
  • 1 L Vegetable broth
  • 0,5 L Cream
  • 250 g Butter

Scallops:

  • 8 Scallops
  • 150 g Sausage meat
  • 1 Pig net fat net
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions
 

  • Noodles: Mix all ingredients together and knead into a dough. Then pull it through a pasta machine and briefly cook in boiling salted water.
  • 2nd sauce: reduce the wine and broth. Add the cream and let it boil down again. Finally add cold butter and mix the whole thing to the desired consistency.
  • Scallops: Cut the mussels open, season a little if necessary and fill with the meat as desired. Then wrap the filled mussels in a fat net and fry them.
