Curry Eggs on Rice
The perfect curry eggs on rice recipe with a picture and simple step-by-step instructions.
For the rice
- 1 Cup Rice
- 1 Onion
- 2 cups Vegetable broth
- Oil
For the egg curyy sauce
- 4 Hard-Boiled eggs
- 1 Onions
- 1 pole Leek
- 1 Apple
- 1 a cup Cremefine
- Butter
- Curry
- Salt
- Oil
- Peel an onion, dice it finely and sauté it in butter until translucent, stir in the rice and deglaze with the vegetable stock, bring to a boil, stir, close the lid and let the rice simmer over a very low heat for about 20 minutes.
- Peel the other onion as well, dice it finely and sauté with the diced apple and the sliced leek stick in the oil, pour in the vegetable stock, simmer for 15 minutes, pour in the Cremefine, puree with a hand blender, season with salt and curry and serve with the peeled eggs on top of the rice.
