Potato Soup with Mushrooms (Mushrooms)
The perfect potato soup with mushrooms (mushrooms) recipe with a picture and simple step-by-step instructions.
- 2 tbsp Oil
- 1 toe Garlic fresh
- 1 small Onion
- 2 tsp Vegetable paste from my KB
- Or as an alternative, you can use a little granular broth
- 500 g Boiled and peeled potatoes
- 200 ml Poultry stock from the jar
- 2 tbsp Cream cheese with herbs
- Or better fresh Or frozen herbs
- 200 ml Cream
- 1 shot White wine
- Water
- 200 g Fresh mushrooms
- 4 piece Spring onions fresh, cut
In the Thermomix it works like this:
- Set the Thermomix to 60 ° C and 12 minutes at level 2.
- Heat one tablespoon of oil in the Thermomix (for 1-2 minutes at 60 ° C and level 2).
- Let the garlic and the halved onion fall onto the running knife at level 5 and then simmer with the vegetable paste at level 2 for about 1-2 minutes. (Instead of my vegetable paste, you can add a little bit of liquor with the liquid later).
- Then let the potatoes fall onto the running knife at level 5.
- Add the stock and cream cheese and puree everything briefly at “Turbo” level. Go back to level 2 and continue heating for about 8 minutes. If necessary, add cream, wine or water to the desired consistency.
- Season to taste with pepper and, if necessary, a little salt!
Of course, you can also do without Thermomix:
- Heat oil in a saucepan and sauté the garlic and onions in it.
- Add the potato in pieces and puree with a hand blender or similar.
- Add the cream cheese and, if necessary, fold in with the hand blender.
- Add the cream, the wine and the stock or the stock dissolved in water until the desired consistency is achieved.
- Season to taste with pepper and salt.
The mushrooms:
- In the meantime, heat 1 tablespoon of oil in a pan and fry the sliced spring onions with the sliced mushrooms. Season with salt and pepper. Put aside.
- Fill soup into plates. Spread the fried mushrooms on the soup and sprinkle with fresh herbs if necessary.
Child variant:
- My kids don’t like mushrooms for them there are Vienna sausages or small meatballs as a “side dish”.
